At our store, we grade new tea into three categories: "Mirumeka", which is only found when the new buds are very small (approximately one bud and three leaves), "Shinchaka", which grows a little larger and has about one bud and four leaves, and "fresh but normal sencha aroma", which is different from the above.
The new tea "Matsu" is a top-class new tea that spreads the "milme aroma" the moment you put it in your mouth, followed by the "new tea aroma" in the aftertaste. It has a rich, rich umami and sweetness unique to Sencha that is different from other tea varieties, and is not just refreshing, but also has a complex mix of aromas and flavors that are difficult to describe accurately, making it a tea that can be enjoyed using all five senses.
In Kyoto, picking starts at the end of April, but only the tea picked at the very beginning will have the aroma of 'milme'. The new buds are lightly steamed and roasted to a minimum, and the tea is processed and finished with the utmost care to preserve the attractive aroma, resulting in the new tea 'Matsu'.
Only a teapot can fully bring out these flavors and aromas. Although teabags are convenient, they are not suitable for this class of tea because the tea leaves do not circulate inside the teapot like they do in a teapot, and the mesh keeps the tea leaves from spreading out. Please use your favorite teapot.
The aroma and flavor of new tea, sweetness, umami, and the fine, delicate bitterness and astringency reminiscent of the seven herbs of spring are fused together on a high level, truly brimming with the essence of Uji, Kyoto.
The aroma of new tea is volatile and will be lost over time, so please enjoy it as soon as possible.
